Vegetable Sauce


6 chopped onions
1 tub mushrooms
6 courgettes
½ bag or more of carrots
bag parsnips
1 small Swede, cut into small cubes
6 parsnips
Mixed herbs


  1. Wash all vegetables and roughly chop them up and add to pan with some oil and garlic and gently fry.
  2. Add some mixed herbs, cover with water and boil until soft.
  3. Then blitz with hand blender until smooth, gently simmer and then add mixed beans
  4. ¾ pan of pasta is needed to be cooked to go with the sauce
