Vegetable Chilli con carne


4x onions,
6 carrots
3 courgettes
6 peppers
1 tub mushrooms
Butternut squash
4 tins mixed beans
4 tins chopped tomatoes
Chilli powder to taste
Garlic to taste
A good squeeze tomato puree


  1. Wash all vegetable and then chop using the food processor.
  2. Fry off all the veg and season with garlic, chilli powder and pepper for a good 10 mins.
  3. Add the tinned tomatoes
  4. Simmer on a low heat for as long as possible so that all the flavours come together, add tomatoe puree & taste.
  5. 10.30 add tins of beans.
  6. Cook rice in a separate pan.
