Homemade Beef, sweet potato and root vegetable stew.

Ingredients

Diced beef cut into small chunks
4 onions
2 leeks
6 parsnips
Carrots
6 Sweet potato
Baby potatoes
Butternut Squash
Celery
1 small Swede, cut into small cubes

Method

  1. Wash and chop the vegetables into small cubes.
  2. Sweat the onions in the pans with a little olive oil and the beef, add some pepper and mixed herbs and garlic.
  3. Then add the rest of the vegetables, cover with water and cook until soft.
