Vegetable and lentil soup.

Ingredients

4 onions
2 leeks
3 courgettes
carrots
parsnips
celery
spring greens
1 small Swede, cut into small cubes and any other vegetables.
½ pack lentils

Method

  1. Wash and chop the vegetables roughly.
  2. Sweat the onions in the pans with a little olive oil, add some pepper and mixed herbs and garlic.
  3. Then add the rest of the vegetables, cover with water and cook until soft.
  4. Cook lentils in another pan for 30 mins.
  5. Use hand blender to get to smooth consistency then add the cooked lentils.
