Sweet n sour pork


Pork tenderloin fillet
3 onions grated
3 courgettes, grated
olive oil
6 grated carrots
5 red peppers, diced small
½ tub mushrooms, grated

For the sauce

½ fresh pineapple cubed
3 tins chopped tomatoes
½ cup tomato ketchup
¼ cup reduced salt soy sauce
¾ cup white wine vinegar
¼ cup sugar


  1. Make the sauce by mixing together all the sauce ingredients in a jug.
  2. Heat two tablespoons of oil in a saucepan and gently cook the chicken.
  3. When chicken has cooked and the onions, courgettes, carrots, peppers and mushroom and gently cook.
  4. Add the sauce and boil for one minute. Turn down on a low simmer.
    Add a little cornflour and water to thicken, if needed
  5. Cook the rice
